1/4 Cup Coconut Flour
1/2 Cup Cocoa Powder
1/2 Cup Erythritol
1/2 t Xanthan Gum
1/4 t Salt
1 t Baking Powder
1/2 Cup Melted Butter (if you use unsalted, add 1/4 t more salt)
4 Eggs
1 t Vanilla Extract
Preheat oven to 350° F and prepare an 8 x 8 pan with parchment paper.
Put all the dry ingredients in a bowl and combine well. Put the eggs in a second bowl and beat them for 1 minute. Combine the remaining wet ingredients together. As you leave your mixer going, place the dry ingredients in with the wet. Stir for about 1 minute.
Spatula out the mixture in to your pan and place it in the oven.
Cook for 30 minutes, then let cool for 1 hour.
